Gym Junkiez presents Guilt Free Dessert Options
Alright gym junkiez!!!
I have received a few requests for dessert options when you have those late night cravings. Here are 3 options for you to enjoy!! Guilt Free!!!! These are quick and easy do it yourself options that will not disappoint! Try them out and let me know how you like them!! Eat Smart!!
Red Velvet Cupcakes
- 4 large egg whites
- 2 teaspoons coconut oil
- ¼ cup non-fat Greek yogurt
- ½ cup vanilla MTS Red Velvet Protein
- ¼ teaspoon vanilla bean powder
- ⅛ teaspoon vanilla flavored stevia
- 2 tablespoons almond meal
- ½ teaspoon baking powder
- 1 cup raw cashews, soaked in filtered water for 4 hours or more
- ⅓ cup filtered water (80ml)
- ¼ teaspoon vanilla flavored stevia
- Begin to make the frosting by draining and rinsing the cashews.
- Blend the cashews with the filtered water and stevia until smooth. (Depending on your blender, you may need a little more water and you may need to scrape the sides down a couple of times.)
- Refrigerate until ready to use.
- Preheat oven to 325F (163C).
- Combine egg whites, oil, and yogurt until smooth (with whisk or electric mixer).
- Add remaining ingredients, and mix until smooth. Batter will be thick.
- Spoon batter into 6 small silicone muffin cups.
- Bake for about 20 minutes, until firm and a toothpick comes out clean.
- Let cool, then frost and enjoy!
Mint Chocolate Chip Protein Ice cream
Ingredients
- 2 Scoops of MTS Mint Cookies and Cream Protein
- ¼ teaspoon vanilla flavored stevia
- ¼ cup non-fat Greek yogurt
- 1 small banana
- ⅛ cup almond milk (or as needed) **very important
- 2 tablespoons dark chocolate chips
- Blender (Recommendation – Ninja Master Prep Blender )
Instructions
Blend all of the ingredients listed. Pour in a bowl. Add chocolate chips and stir!! Quick and Easy!!! Freeze for 30 minutes
Chocolate Chip Protein Cookies
- 2 Scoops of Dymatize vanilla protein powder
- 6 tbsp. coconut flour
- 2 tbsp. Pyure organic stevia blend = ¼ cup baking stevia or sugar
- 2 tbsp. Truvia brown sugar blend = ¼ cup brown sugar
- 1/2 tsp. baking soda
- 1/8 tsp. salt (optional)
- 1/4 cup light butter, softened (I used Smart Balance; can also use butter or ghee)
- 1 whole egg
- ¼ teaspoon vanilla flavored stevia
- 1 oz. dark chocolate chips
- Preheat oven to 350 degrees F.
- Whisk together dry ingredients (through salt) in a mixing bowl.
- Mix in wet ingredients (through vanilla) to form a dough.
- Fold in chocolate chips.
- Lightly coat baking sheet with cooking spray.
- Place twelve rounded tablespoons of dough onto sheet a couple inches apart. Press flat just slightly.
- Bake for 8-10 minutes until edges are golden brown. Enjoy!
